Many Vietnamese dishes are inspired by the French cuisine, because Vietnam was a longtime colony of the French empire. The French arrived in Vietnam initially as missionaries in the seventeenth century and established colonial control of Vietnam. They brought their language and their food, including eventually the baguette, the long thin loaf of bread that became popular in France in the early twentieth century.
